EGG-WHITE FRITTATA MUFFINS

EGG-WHITE FRITTATA MUFFINS

Ingredients:

  • 1 tsp olive oil
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1/4 yellow onion, chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 10 egg whites (either separated or in a carton)
  • 2 whole eggs
  • 2 cups fresh spinach

Directions:

  1. Preheat your oven to 350 and set out your muffin tin
  2. Spritz oil in a non-stick pan over medium heat. Add in the onion and bell pepper. Add salt and pepper to taste and cook until veggies are a bit soft and slightly browned. Remove from heat once cooked and toss in un-cooked chopped spinach.
  3. Next up: make the egg mixture. Just crack your ten egg-whites and 2 whole eggs into a mixing bowl and whisk until frothy.
  4. Evenly divide the veggie mixture into each cup, then pour in the egg mixture over each about 2/3 high in each cup
  5. Bake in oven for 30 minutes. After 30 minutes, turn them around and bake for another 15 minutes or so until your eggs are set. Remove from the oven and let cool slightly on a cookie rack, and serve!
