BREAKFAST STUFFED PEPPERS

Ingredients:

  • 2 bell peppers, halved and seeded
  • 6 egg whites
  • 1 whole egg
  • 2 cups veggies (of your choice)
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 375 degrees.
  2. Place your peppers in a baking dish. In a small bowl, whisk together your eggs, veggies, salt and pepper. Pour mixture into peppers. Bake for 35-40 minutes or until egg is cooked firm.
