BEAN SALAD

Ingredients:
- 2 cup black beans, rinsed and drained
- 2 cup kidney beans, drained
- 2 cup cannellini beans, rinsed and drained
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 2 tbsp fresh lime juice
- 1 tbsp fresh lemon juice
- 1 tbsp salt
- 1 garlic clove, crushed
- 1/4 cup fresh cilantro, chopped
- 1/2 tbsp ground cumin
- 1/2 tbsp ground black pepper
- 1/2 tsp chili powder
- 1 dash of hot pepper sauce
Directions:
- In a large bowl, combine beans, bell peppers, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.
- Drizzle olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
