APPLE PECAN ROSEMARY CHICKEN SALAD

APPLE PECAN ROSEMARY CHICKEN SALAD

Ingredients:

  • 1/2 cup plain Daiya yogurt
  • 2 tbsp mayonnaise (olive oil based)
  • 1 tbsp red wine vinegar
  • 2 1/2 tsp rosemary, finely chopped
  • 1 tsp dijon mustard
  • 1/2 tsp stevia
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 lb boneless chicken breasts, chopped into small cubes
  • 1 1/4 cup apples, chopped
  • 1/3 cup pecans, chopped
  • 1/3 cup dried cranberries, chopped

Directions:

  1. Add chicken, apples, pecans and cranberries to a large mixing bowl.
  2. In a separate small mixing bowl mix together yogurt, mayonnaise, red wine vinegar, rosemary, mustard, and onion powder. Season with salt and pepper to taste.
  3.  Pour over chicken mixture then toss to evenly coat. Serve in a lettuce wrap!
