APPLE PECAN ROSEMARY CHICKEN SALAD

Ingredients:
- 1/2 cup plain Daiya yogurt
- 2 tbsp mayonnaise (olive oil based)
- 1 tbsp red wine vinegar
- 2 1/2 tsp rosemary, finely chopped
- 1 tsp dijon mustard
- 1/2 tsp stevia
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 lb boneless chicken breasts, chopped into small cubes
- 1 1/4 cup apples, chopped
- 1/3 cup pecans, chopped
- 1/3 cup dried cranberries, chopped
Directions:
- Add chicken, apples, pecans and cranberries to a large mixing bowl.
- In a separate small mixing bowl mix together yogurt, mayonnaise, red wine vinegar, rosemary, mustard, and onion powder. Season with salt and pepper to taste.
- Pour over chicken mixture then toss to evenly coat. Serve in a lettuce wrap!
